I used this as a basis for a soup. I used about 3 cups of peeled, sliced parsnips, 2 cups of peeled, sliced carrots (all I had), half a swwet yellow onion, about 1.5 inches of diced ginger, and 2 cups of chicken stock. after blending I added about 2 cups of skim milk and put it back on to simmer.

Yet another variation on the eternal "simmer stuff in a pot with chicken stock and then blend it" school of soup-making. sounds good.
