Ok, so after reading up on the issue at the Green Restaurant Association and the FSTC websites, maybe you're ready to really dig in and find out what's out there for you. The EPA and the DOE joined forces to come up with the Energy Star certification process. Energy Star appliances are more efficient than standard models. The certification is widespread in home appliances, but also includes a few categories of commercial food service equipment. The links on the right-hand side of the page are especially helpful.
