Not a seattle location, but a good web resource
Celiac Disease Gluten-free Diet Support Center at Celiac.com provides important resources and information for people on gluten-free diets due to celiac disease, gluten intolerance, dermatitis herpetiformis, wheat allergy, or other health reasons. Celiac.com offers key gluten-free and wheat-free on-line resources that are helpful to anyone with special dietary needs. Our purpose is to raise celiac disease awareness, and to provide people who have it with enough information to get diagnosed and treated so that they can begin to lead more comfortable and healthy lives.

Kaili's Kitchen is located on the ground floor of the Washington State Department of Transportation Northwest Region Building in Shoreline. The cafeteria menu features standard American fare, such as hamburgers, cheeseburgers and fish-n-chips. Vegetarians can enjoy the gluten-free salad bar or a veggie sandwich. Kaili's uses only gluten-free flours, and makes everything from scratch. There's also a freezer full of gluten-free items to take home. And Kaili encourages people to call ahead for special orders, gladly catering to vegetarians, vegans and more.

In Seattle you'll find a good number of fine eateries that will make you forget you're on a restricted diet —while the memory lapse won't get you into trouble.
