About this trail:
My husband and I have started a tradition of celebrating Valentine's Day each year with a fancy dinner at home.  We dress up, deck out the table with nice linens and dishes, and drink wine with each course.  This trail describes the dishes I prepared for this year's dinner.  I designed each course to work well with a Riesling or a Sauvignon Blanc.

Prepare 6 baskets ahead of time and refrigerate. (About 1/3 recipe as described.)  Silicone cookie sheet would have been nice, but PAM spray worked ok.  I used the egg carton for shaping.  Serve 3 baskets on each plate, arranged in a triangle.

Prepare a port wine reduction ahead of time.  (Onions, carrots, and bay leaves are optional.)

Just before dinner, prepare a salad with the following ingredients artfully arranged: baby spinach, 3 pear slices, 1 oz. slice goat cheese, roasted walnuts.  When time to serve, drizzle port wine reduction and lemon vinaigrette, if desired.

Prepare just before dinner and reheat quickly in pot when it it time to serve.  Use a 1/2 cup measuring cup to mold and turn over onto each plate.  Garnish with fanned basil leaves.

Prepare sorbet ahead of time and serve in lemon shell, or in small custard dish.

Ignore the bisque recipe - marinate salmon as described, starting before dinner.  Broil salmon during previous course.  Serve with fanned asparagus spears (next trail mark.)

Prepare sauce ahead of dinner.  Heat sauce during previous course and pan-sear scallops between courses.  I left out the pasta and simply served three giant scallops with sauce on each plate.  Serve also with zucchini spaghetti (next trail mark.)  Keep it separate from the sauce!

Prepare ahead of time and serve as garnish with pan-seared scallops.

Prepare batter and put into muffin tin ahead of dinner (keep in fridge.)  Preheat oven and bake during previous courses.

Arrange neatly on a small sushi plate before dinner.  Serve with a fruity liqueur if desired.
