Why is China's fried chicken wings so freakin good ?
I eat out at the Chinese restaurants, here in the US. And they
have the best chicken wings, in town. No body comes
close. But they are so good, and have a delicious flavor
to it. Does anybody know the secret recipe, to this food,
and why it tastes so good ? Cmon Asia. Show me what ya got.

Okay. thanks for asking this question...because I recently thought the same thing. I love chicken wings at chinese restaurants!
My friend's dad owns a chinese restaurant and she says that it's the kind of oil they fry it in and how they marinate the chicken prior.
I still haven't mastered the concept though.

RECIPE
12 chicken wings -- whole
1 cup water-chestnut flour
4 cups peanut oil for deep-frying
MARINADE
1/2 teaspoon freshly grated ginger
1/8 cup light soy sauce
1/8 cup dry sherry or Chinese rice -- wine
1/2 teaspoon five-spice powder
This is why they taste soo good they have alot of flavor, plus chicken taste good anyway, and its fried

This is from the UK, but I am legendary for my Chinese wings, and this is a Chinese recipe. Try it by all means, but do not be tempted to overdo any of the ingredients - it just won't work. The correct amounts are vital and ensure that they are moreish.
Ingredients
1kg chicken wings, cut into three with the tips discarded
2 tbs peanut (groundnut) oil
1/3 cup dark soy sauce
2tbs honey
2tbs Chinese wine or dry sherry
1 clove garlic, crushed
1/2 tsp finely grated fresh ginger
Method
Heat oil in wok and fry wings until browned. Add soy, honey, wine, garlic and ginger and stir well.
Reduce heat to low, cover and simmer about half an hour or until the wings are tender. Toward the end of cooking stir frequently to ensure the sweet glaze does not burn. Serve hot either alone or with plain boiled rice.
The trick is to simmer long enough so the glaze gets thick without burning and clings to the wings.
Try it - you will amaze your friends, who will often think you sent out for them!!
