I have no problem using Gedit and Nautilus to browse my linux machine, why can't I use TextEdit and Finder on the Mac to look at system files and raw unix text files?

To cut to the answer. The easiest way to use your MacBook as an X-Windows terminal is to use the supplied X11.app. Run the terminal-xterm then enter the following.
ssh -X your-linux-username@linux-host-name.domain-name
now run any X11 program.
ssh -X your-linux-username@linux-host-name.domain-name

Basic setup. Linux home server with a static IP running rsync server. Set up anacron and use rsync client side for the Mac and PC to do backups over the internet. Sweet.
